How this tool works
Start with the same inputs as the free menu engineering matrix. Add a measurement period, fixed costs and your own price, variable-cost and sales-volume scenarios. The dossier compares five variants, identifies questions for each dish and gives a reference price for the current mean contribution. PDF and CSV include inputs, results and assumptions.
Common questions
What exactly am I buying?
For 1,900 credits (€19 including VAT), you receive this complete dossier as PDF and CSV. Preview key figures for free first. The free matrix remains separately available.
Does the report predict sales?
No. You set the volume change yourself. Higher prices do not automatically reduce sales in the model; test your assumptions in practice.
Which details do you need?
- Comparable menu category
- Dishes in the same period
- Measurement period for this report
- Scenario: selling-price change (%)
- Scenario: variable-cost change (%)
- Scenario: sales-volume change (%)
- Allocated fixed costs in this measurement period
Limits of this tool
- Compare up to 200 dishes within one comparable menu category and the same measurement period. All prices and variable costs exclude VAT. Use actual portions sold, not revenue as a quantity.
- Contribution per portion = selling price minus entered variable costs. The contribution threshold is the unweighted average per dish; popularity uses 70% of the expected share under an equal split. A value exactly on a threshold counts as high.
- Contribution is not net profit. A matrix does not prove a dish should be removed: check dietary needs, availability, preparation time and whether the period is representative. Dishes with zero sales count if they were offered throughout the period.
- Scenarios are calculations, not demand forecasts: higher prices do not automatically reduce sales in this model. Scenario prices and costs are rounded per portion to cents, then multiplied by sales rounded to whole portions. Fixed costs remain unchanged.
