  • Compare up to 200 dishes within one comparable menu category and the same measurement period. All prices and variable costs exclude VAT. Use actual portions sold, not revenue as a quantity.
  • Contribution per portion = selling price minus entered variable costs. The contribution threshold is the unweighted average per dish; popularity uses 70% of the expected share under an equal split. A value exactly on a threshold counts as high.
  • Contribution is not net profit. A matrix does not prove a dish should be removed: check dietary needs, availability, preparation time and whether the period is representative. Dishes with zero sales count if they were offered throughout the period.

How this tool works

Compare dishes from the same category and period. Contribution per portion is selling price minus variable costs, excluding VAT. The contribution threshold is the unweighted mean across dishes. Popularity uses 70% of expected sales share under an equal split. Select a dish to inspect its position and a practical question to investigate.

Common questions

Is contribution the same as profit?

No. Contribution still needs to cover fixed costs and any variable costs you omitted. Include all relevant variable costs per portion.

Should a weak dish be removed?

Not automatically. Check availability, dietary needs, kitchen capacity and the measurement period. The matrix provides a starting point for investigation.

Which details do you need?
  • Comparable menu category
  • Dishes in the same period
